Veggie Pinwheels...
I started out making my own homemade whole wheat pizza dough.
Whole Wheat Pizza Dough
2 1/4 cups (270g) Shop Rite Whole Wheat Flour - 990 cal
2 Tbsp Splenda - 0 cal
3/4 Tsp Iodized Salt - 0 cal
1 Tbsp Yeast - 0 cal
1 Tsp Garlic Powder - 0 cal
2 Tbsp Olive Oil - 240 cal
1 Cup Hot Water - 0 cal
I throw it all in my stand mixer with the dough hook and let it mix up. I don't usually use all the hot water...just enough to form the dough ball.
I then put it in a bowl that I sprayed with olive oil, cover with plastic wrap and let rise.
Next I chopped up a bunch of Veggies...
Spinach / Baby Bella Mushrooms / Broccoli / Green Pepper / Red Pepper / Eggplant / Yellow Onion / Garlic
After letting the dough rise for an hour or two I took it out, punched it down and split it into 2 pieces.
I then rolled out the dough into a semi-rectangular shape.
I then put the following on the dough
1/2 cup of sauce - 60 calories
1 cup Mozzarella - 360 calories
400 g Veggie Mix - 115 calories
I rolled the whole thing up to form a log.
I then cut the log into pieces and cooked them on 400 for about 20 minutes
Here is the finished product...
They didn't turn out great mainly cause the veggies shrunk up but they at least taste good.
In the end calorie count turned out to be @1.62 calories per gram.
I think I might try making this again but might need to cook the veggies first or maybe cook the roll and slice after? Either way at least it's some real food to eat and healthy!






I would try to sautee the veggies a little bit first, but not too much. Dont want them turning to mush! And yes, cook it whole and slice after it has baked. Besides that, taste is more important to me than looks! Im proud of you for cooking and getting some real food into your diet! :)
